Protein Pumpkin Spice Pumpkins

Published: Oct 16, 2026

These no-bake protein bites taste like pumpkin pie and are shaped like mini pumpkins. Add toothpick ridges and a mint leaf “stem” for a snack that’s as cute as it is satisfying.

Protein Pumpkin Spice Pumpkins

Ingredients

  • 3 scoops of Kids Daily Growth + Protein powder
  • 1 cup coconut flour, plus extra if needed
  • ½ cup creamy almond butter
  • ¼ cup maple syrup
  • 2 tbsp real pumpkin purée
  • 1 tsp pumpkin pie spice
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of fine sea salt

Instructions

  1. 1. Whisk together the almond butter, sugar-free maple syrup, and pumpkin purée in a medium bowl until fully combined.
  2. 2. Add the coconut flour, protein powder, pumpkin pie spice, cinnamon, nutmeg, and salt. Stir thoroughly.
  3. 3. Let the dough sit for 2–3 minutes so the coconut flour absorbs the liquids. If too sticky: Add 1 extra teaspoon of coconut flour. If too dry: Mix in 1 extra teaspoon of almond butter or maple syrup.
  4. 4. Portion out the mixture into bite-sized balls, place on a tray, and let chill in the refrigerator for about 15 minutes.
  5. 5. Use a toothpick or wood skewer to create ridges and give it that pumpkin look!
  6. 6. Secure a small mint leaf with a cake pop stick.
