Mini Pumpkin Muffins

Ingredients

  • 1 scoop Hiya Kids Daily Greens + Superfoods vanilla powder
  • 2 tsp pumpkin spice blend
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1¾ cups whole wheat or regular flour
  • ⅓ cup rolled oats + extra for topping
  • ⅓ cup melted coconut oil
  • ½ cup maple syrup
  • 2 large eggs, room temp
  • 1 cup pumpkin purée (not pie filling)
  • ¼ cup milk (any kind)

Instructions

  1. 1. Preheat oven to 350 degrees
  2. 2. Mix dry ingredients and wet ingredients in two separate bowls
  3. 3. Combine in one large bowl until well combined
  4. 4. In a lined mini muffint in, spoon in batter
  5. 5. Top with oats
  6. 6. Bake for 10-12 minutes or until a fork comes out clean
